Gluten Free MuffinsLet's treat ourselves to a yummy muffin and cuppa chai after a winter yoga class.. These muffins are incredible and quite simple and healthy :)
Getting started:
Wet mix: 3 eggs 1/2 cup olive oil 1/2 cup milk(rice, soy, oat or cows) 1/2cup orange juice ( or forget the milk and make it 1 cup OJ) your choice 1 tablespoon vanilla Mix well after each ingredient.
Dry mix: 1 cup almond meal ( or that fine ground macadamia works well too ) 1 cup Gluten free self-raising flour mix 2/3 cup rapadura sugar or raw or brown 1 tsp baking powder 1 tsp xantham gum
Mix well Then mix wet mix into dry.
Add whatever your heart desires, fruit, nuts, seeds, anything.....
Grease muffin pan with olive oil or butter.
Preheat oven 200C Put muffins in for 6 minutes then lower temp to 180 for another 10 minutes or until done.
